Have you tried black garlic?!

It’s one of my favorite ingredients that I rarely see used! It has this rich, subtle sweetness and a complimentary umami flavor! It also has a very jam like consistency which makes it pretty easy to work with!

After a few tests, this is the best version of a black garlic steak I have tried! Butter poached worked well, but this brought so much incredible flavor to the steak and really hit the spot!

I minced a bunch of the black garlic and after seasoning the steak with truffle salt, i covered both sides entirely with the black garlic!

Then i cooked this in my sous vide for 2 hours at 120F before searing it over wood fire and charcoal!

A perfectly cooked steak and it tasted amazing!!
