Recreating the Kasama breakfast sandwich from The Bear at home.
I'm way behind the trend on this one, but I've been wanting to try this sandwich for a long while. Going across town and standing in line isn't exactly how I want to spend a saturday morning...so I had to give recreating it a go.
Every element of this thing is amazing. From bottom to top you've got soft potato bun, crispy hashbrown, sweet/savory/unctuous longanisa, and a creamy yet slightly fluffy custard egg patty. When I was testing the egg patty recipe out, I had a sandwich with just the egg and hashbrown which was great. BUT the longanisa completely changes the whole game. That, in combination with everything else is why there are lines out the door at Kasama.
Ingredients:
Potato buns
hashbrown patties
sweet longanisa
American cheese
8 eggs
half cup of cream
pinch of salt

I messed up filming and forgot to include the bit where I covered the egg pan in foil so it could steam properly in the oven.
From there it's pretty straightforward. Just cook your hashbrown patties in a pan or airfryer. Cook your longanisa patties until caramelized and cooked through. Then assemple with a slice of cheese on your potato bun.
When you trim the egg patty into squares, save the edge scraps. They'll keep in the fridge until the next day where you can reheat them and put them in a breakfast burrito.
If you struggle to find longanisa, you could make a substitution with another sweet breakfast sausage. But I urge you to check around to see if it's possible to get it where you are.
This is one thing I would highly recommend you try making at home if you're craving a fantastic breakfast sandwich this weekend.
