SLOW COOKER BRAISED BEEF RECIPE

INGREDIENTS
• 1 kg Stew Beef or Chuck roast (Diced)
• 1 cup Red Onion (Roughly Chopped)
• 1 cup Celery (Roughly Chopped)
• 1 cup Carrot (Roughly Chopped)
• 4 Cloves Garlic (Minced)
• 4 cups Can Tomato (Diced)
• 8 cups Beef Broth
• 2 tbsp Chipotle in Adobo Sauce

DRY RUB
• 2 tbsp Cajun Seasoning
• 1 tbsp Smoked Paprika
• 1 tbsp Oregano

INSTRUCTIONS
• Combine all the spices in the bowl and mix well.
• Sprinkle the diced beef with the dry spice mixture.
• In a large pot, heat to medium-high heat and add 2 tablespoons of oil. Add the beef and sear for 4 minutes.
• Remove the beef when it is nicely seared.
• Add a little more oil and sauté the onion, carrot, and celery. Stir until they are tender (about 4 to 5 minutes).
• Add the garlic and stir for another minute before adding the adobo sauce and continuing to stir for another minute.
• Return the beef and give it a quick stir.
• Add diced tomatoes and beef broth.
• Bring the broth to a boil and then reduce the temperature to low. 
• Cover and simmer for 3 to 4 hours, or until the beef is forked tender.
• Remove the beef and shred. Then, return the beef to the pot and stir.
• Serve the beef with tortillas, salsa, and lime cilantro sauce.


HOMEMADE ZESTY SALSA RECIPE

INGREDIENTS
• ½ cup Olive Oil
• 2 tbsp Red Wine Vinegar
• ½ cup Red Onion (Diced) 
• 3 Cloves Garlic (Minced)
• ½ cup Cilantro Leaves (Chopped)
• ½ cup Roma Tomato (Diced)
• ½ cup Pepper (any kind, Diced)
• Salt and Pepper (to taste)

INSTRUCTIONS
• Combine all of the ingredients in a mixing bowl and mix.

CREAMY AVOCADO-LIME SAUCE RECIPE

INGREDIENTS
• 1 clove Garlic
• ½ cup Cilantro
• 1 Avocado
• 2 tbsp Lime Juice
• Salt & Pepper
• 1 cup Greek Yogurt

INSTRUCTION
• Blend in the blender or food processor all of the ingredients until smooth.
