Quick German Potato Salad
We don’t eat a ton of pork chop but when I do crave fried pork chops I tend to crave Mashed Potatoes or German Potato Salad. In junior high there was this deli by our house that made the best German Potato Salad and I can still smell it. If it is just the two of us, I will make a quick version (this recipe) and it is just perfect for getting a quick meal to the table.

2 small potatoes per person sliced thin
1 piece of bacon per person chopped (or bacon bits from Costco work great)
1 TB onion per person
Splash of apple cider vinegar
1 tsp dill
Salt and pepper to taste

Slice potatoes very thin, using a very sharp knife or mandolin. Boil potatoes in very salty water until fork tender. Drain and transfer to a bowl large enough to mix in. While they are boiling, brown up bacon with onion saving the grease. This grease is part of your dressing. Once the bacon and onions are brown, add apple cider vinegar and combine. Remove from heat. Mix bacon mixture with potatoes, adding dill. Taste and adjust seasoning.
Serve warm.
