Simple Pasta with Egg Yolk and Parmigiano
Ingredients:
250 grams pasta (your choice of type)
1 egg yolk
50 ml olive oil
50 grams Parmigiano cheese, grated
Salt, to taste
Black pepper, to taste
1 teaspoon herbes de Provence
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the pasta and cook according to the package instructions until al dente.
Reserve half a cup of the pasta cooking water, then drain the pasta.
Prepare the Sauce:
In a large bowl, mix together the egg yolk, olive oil, Parmigiano cheese, salt, black pepper, and herbes de Provence until well combined.
Combine Pasta and Sauce:
Gradually add the reserved pasta water to the mixture, stirring continuously to create a smooth sauce.
Add the cooked pasta to the bowl and toss well to coat the pasta evenly with the sauce.
Serve:
Serve immediately, optionally garnished with extra Parmigiano and a drizzle of olive oil if desired.
