1½ cups (200 grams) cucumber peeled and diced
1 cup (130 grams) green bell pepper sliced
½ cup (70 grams) Kalamata olives
1 small red onion thinly sliced
5 ounces (140 grams) feta cheese or non-dairy feta, crumbled

3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon mustard
1 tablespoon maple syrup
