Do you know this plant?

It's called amaranth and it's an absolutely beautiful plant that we love. The leaves are edible in salads or like spinach, the seeds are prolific (buy it once and never buy it again) and actually contain lots of protein. It's in the same family as quinoa!

It's a great crop that we'll continue to grow every year. This video is from last summer, but we're growing it again this year too!

We actually harvested these plants, dried the seeds and eat them like oatmeal. Let me know if you want to see a video of this process.

Amaranth is pretty drought tolerant once established and should heavily be considered in your garden!
