1 piece of picanha (approximately 1.2 kg)
Coarse salt to taste

Preparation
Preparation of the Meat:

Remove the picanha from its packaging and, if necessary, trim it, removing any excess fat while leaving enough to ensure flavor.
Make small cuts in the fat to prevent the meat from curling during cooking.
Seasoning:

Spread a generous amount of coarse salt all over the picanha, massaging it well to allow the seasoning to penetrate the meat. For a special touch, you can drizzle some olive oil over the meat.
Grilling:

Prepare the grill with charcoal and light it until it forms a good layer of embers. The ideal temperature is when you can hold your hand over the grill at a height of about 10 cm for only 5 to 7 seconds.
Place the picanha on the grill with the fat side up and grill for approximately 5 minutes to seal the meat.
Grilling Process:

Flip the picanha to grill the fat side, allowing it to melt and drip over the meat, imparting even more flavor and juiciness.
Continue grilling, turning the meat occasionally, for another 15 to 20 minutes, or until it reaches the desired level of doneness. For a medium-rare steak, the internal temperature should be around 57°C.
Resting and Slicing:

After removing the picanha from the grill, let it rest for 5 minutes before slicing. This allows the juices to redistribute, ensuring a more succulent meat.
Slice the picanha against the grain for tender and flavorful slices.
Serving Suggestions
Serve Grilled Picanha with traditional accompaniments such as white rice, farofa (toasted cassava flour mixture), vinaigrette, and garlic bread. A fresh salad or grilled vegetables also make great options to complete the meal.
